Warm Curried Fruit Compote

This easy-to-make, slightly sweetened side dish combines canned fruits (peaches, pears, apricots & pineapple) with raisins and curry powder.
 

Ingredients

  • 1 16 ounce can peach slices
  • 1 16 ounce can pear slices
  • 1 15 ounce can (or 2, 8 ounce cans) apricot halves (you may cut halves into slices)
  • 1 15 ounce can pineapple chunks
  • 1 cup golden raisins
  • 3/4 cup light brown sugar
  • 1/2 cup (unsalted) butter, melted
  • 3 teaspoons curry powder
  • 3 tablespoons freshly squeezed lemon juice

Method

Drain all fruits and place in a 2-quart ovenproof casserole with the raisins. (Save fruit juices for another use, if desired.) Mix last four ingredients and pour over fruit. Bake covered, about 1 hour at 325 degrees. Serve warm.

 

Notes: This is a wonderful easy side dish to serve with an Easter ham.
