Sunshine Yams

Baked mashed yams flavored with citrus rinds, honey, and spices that would be great for Easter or Thanksgiving dinner.
Ingredients
- 2 pounds yams, peeled and cut into 1 inch slices
- 1/3 cup honey
- 1/4 cup orange juice
- 1 tbsp grated orange peel
- 1 tbsp grated lemon peel
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/8 tsp white pepper

Method
Place yams in a large saucepan and add enough water to cover. Bring to a boil over high heat. Reduce heat to medium, cover and cook until tender, about 10 minutes. Drain yams and cool. Preheat oven to 350F. Transfer yams to a large bowl. Using a potato masher or a fork, mash yams until smooth. in a small saucepan, combine honey, orange juice, orange peel, lemon peel, nutmeg, salt, and pepper. Bring mixture to a boil over medium heat; stir to melt honey. Remove from heat. Stir honey mixture into yams. Spoon mixture into a 1 quart casserole and smooth top. Bake until heated through, about 15-20 minutes.
