Spring Dandelion and Strawberry Salad

A light and fresh salad perfect Easter or any special spring meal. The salty feta perfectly complements the sweet strawberries and peppery dandelions.

Ingredients:

• 8 cups fresh strawberries, quartered
• 4 cups crumbled or diced feta cheese
• 3 cups chopped dandelion greens
• ? cup fruity extra virgin olive oil
• Juice of two limes
• Freshly ground black pepper to taste

Method

Just before serving, toss all ingredients together in large bowl.

Notes: This has always been a big hit at Easter--the kids gathered dandelions while they were searching for Easter eggs. Later, at our family Easter picnic, it was a snap to make this salad and everyone really loved the unique combination of flavors.
