Split Pea Soup

A meaty ham bone is simmered slowly along with split peas, onion and carrot. The soup may be garnished with crumbled bacon and hard cooked egg.
 

Ingredients

  • 1 large ham bone
  • 1 pound dry split pea
  • 3 quarts cold water
  • 1 onion, chopped
  • 1/2 carrot, chopped
  • Seasonings (desired amount of salt, red and white pepper)
  • 6 slices bacon, crisp-cooked, drained and crumbled (optional)
  • 2 hard cooked eggs, chopped (optional)

Method

Place split peas, ham bone, onion and carrot in cold water and bring to a rapid boil. Continue boiling until peas have "dissolved." Turn heat low and add seasonings. Cook slowly for 2 1/2 hours. Remove meat from ham bone and chop, discarding bone. Pour soup through strainer. Add ham to soup. Add crumbled bacon and chopped egg, if using, to each bowl after it's been ladled.
