Spicy Easter Egg Salad

Several seasonings and Dijon mustard "spice up" this egg salad mixture, which also has cucumber, onion, celery and walnuts.
 

Ingredients

  • 6 large hard cooked eggs
  • 1/4 cup mayonnaise
  • 1/3 cup Dijon mustard
  • 1/3 cup sour cream
  • 2 tbsp apple juice
  • 1/4 cup finely chopped, peeled and seeded cucumber
  • 1 tbsp chopped fresh parsley
  • 1 tsp chopped fresh basil
  • 1 tsp ground black pepper (or to taste)
  • 1 tsp salt (or to taste)
  • 2 tsp fresh roasted garlic
  • 1 tsp paprika
  • 1/2 tsp ground red pepper (or to taste)
  • 3/4 cup chopped red onion
  • 1/2 cup chopped celery
  • 1/4 cup fresh chives, chopped
  • 1/2 cup chopped walnuts

Method

Cut eggs into slices 1/4- to 1/2-inch thick; set aside. Mix mayonnaise, mustard, sour cream, apple juice, cucumber, parsley, basil, black pepper, salt, garlic, paprika, and red pepper in a medium mixing bowl. Add sliced eggs, onion, celery, chives, and walnuts to mayonnaise mixture. Gently fold until sauce is spread evenly throughout salad.

 

Notes: The perfect recipe to use up those extra Easter eggs. Place it on some iceberg lettuce for a delightful salad, or on toasted bread for a wonderful sandwich.
