Southwest Creamy Corn Casserole

This colorful side dish goes together in a hurry and makes a great accompaniment for your Easter ham.
Ingredients
- 1 (15 1/2 oz.) can cream-style corn
- 1 (15 1/2 oz.) can whole kernel corn, drained
- 3/4 cup finely chopped onion
- 1/4 cup finely chopped green bell pepper
- 1/4 cup roasted red bell peppers, drained and chopped
- 1 cup dairy sour cream
- 2 slightly beaten eggs
- 3 tablespoons butter, melted
- 1 (8 1/2 oz.) pkg. corn bread mix
- 2 tablespoons sugar
- 1/2 teaspoon seasoned salt
- 1 cup shredded cheddar cheese

Spray a 2-quart baking dish with nonstick cooking spray; set aside. In a large bowl combine cream-style corn, drained corn, onion, green bell pepper, roasted red peppers, sour cream, eggs, butter, corn bread mix, sugar, salt, and cheese. Transfer to prepared baking dish. Bake in a 350 degree oven for 50 to 60 minutes or until top is golden and center is set.
Notes: The versatility of corn allows for endless creativity in the kitchen, so I am always trying it in new ways. This delicious and easy recipe I created is now a family favorite. It has a very short preparation time and is the perfect complement to an Easter ham.
