Sausage Logs

A unique breakfast log made with sausage, cheese, onion, and quick oats.
 

Ingredients

  • Sausage - 2 lbs.
  • Cheddar cheese, shredded (opt.) - 1/2 c. Onion, finely minced - 1/4 c.
  • Fresh rubbed sage - 2 tsp.
  • Worcestershire sauce - 1 1/2 tsp.
  • Dry mustard - 1/2 tsp.
  • Eggs - 2
  • Skim evaporated milk - 1 c.
  • Oats - 2 c.

Method

1. Mix all ingredients thoroughly. 2. Form into 12 oz. logs (about 3), approx. 8 in. long & 2 in. diameter. 3. Bake at 350 degrees for 45 min. 4. Each log serves 4-6.

 

Notes: 1.Wrap individual logs in plastic wrap, then place in pan for flash freezing. (I make a slight curve in the log for a prettier prsentation.) 2. After they have frozen firm, place in a freezer bag. 3. Place frozen log in refrigerator to thaw the night before baking to decrease baking time. 4. I have even partially cooked a frozen log in the microwave, then finished baking in the oven.
