Neapolitan Easter Rice Pie


A traditional Italian Easter dish perfect for brunch or as a side dish--an egg, rice and cheese casserole.



Ingredients:

  • 3 tablespoons dried bread crumbs
  • 4 cups cooked rice
  • 1 cup ricotta cheese
  • 3/4 cup grated Romano cheese
  • 1 teaspoon black pepper
  • 1/4 teaspoon grated nutmeg
  • 3 eggs, beaten
  • 1 cup milk
  • 2 tablespoons butter, cut into small pieces

Method

Preheat oven to 350 degrees. Butter a 2 quart baking dish and sprinkle with 1 tablespoon bread crumbs. In a mixing bowl, lightly blend rice, ricotta, 1/2 cup Romano cheese, black pepper, nutmeg, eggs and remaining bread crumbs. Stir in milk until just blended. Spoon mixture into prepared dish. Sprinkle top with 1/4 cup Romano cheese. Dot top of cheese with butter. Bake at 350 degrees for 45 minutes, or until set and lightly browned. Serve warm or cold.

Notes: This is a traditional Easter recipe served in many Italian households at Easter. It is served as a side dish, but it is equally good at breakfast.
