Nana's Sweet Potato Fluff


It wouldn't be the holidays without Nana's baked sweet potatoes with raisins and walnuts topped with marshmallow.



Ingredients:

  • 3 large sweet potatoes  
  • 2 eggs  
  • 1 cup light brown sugar  
  • 1 tbsp. vanilla  
  • 1/4 c. bourbon  
  • 1 cup golden raisins  
  • 1 cup chopped walnuts  
  • 2 cups marshmallow creme

Method

Boil sweet potatoes in their skins until soft. Plump raisins in bourbon while potatoes cook. Peel sweet potatoes and mash in large bowl. Whisk eggs and add to potatoes Add vanilla, raisins with bourbon, chopped walnuts. Stir well and pour into large round casserole. (This much may be done the day before -- cover and refrigerate.) Spoon marshmallow creme over top. Bake uncovered at 350F for 1/2 hour. Serve immediately.

Notes: Best while served hot -- after turkey is removed from oven, put casserole in and cook while turkey sets and is carved.
