Mango-Ginger Chutney

Serve this mango, ginger, and vinegar mixture with grilled meats or mix it in with couscous. The cayenne pepper adds spiciness.
Ingredients
- 1 pkg frozen mango pieces(available in frozen aisle at grocery stores)
- 3 tsp minced fresh ginger
- 1 cup cider vinegar
- 2 tsp cayenne pepper
- 1 tsp salt

Method
In heavy pan stir all ingredients together. Bring to boiling; reduce heat. Simmer, uncovered, over medium-low heat, stirring occasionally, until mixture thickens (15-30 minutes). Cool to room temperature before serving.
Notes: Good with chicken burgers or other sandwiches or grilled meats.
