Mandarin Ham and Egg Rice

Sliced hard cooked eggs and green onions add a springtime touch to the presentation of this baked ham with cooked rice and mandarin oranges.
Ingredients
- 3-4 pound boneless ham
- 1 small can Mandarin oranges
- 1 1/2 cups brown sugar
- 1 1/2 cups white rice
- 3 cups water
- 1/2 teaspoon salt
- 1 teaspoon butter
- 6 hard cooked eggs
- 1/2 cup sweet and sour sauce
- 2 green onions, sliced thin

Method
Preheat oven to 350 degrees. Score ham deeply every 1 inch. Place on rack in roasting pan. Push orange slices into the scores and spoon brown sugar evenly into scores. Pour some juice from oranges evenly over ham. Place ham into preheated oven and bake about 1 hour. Cook rice with water, salt and butter in covered pan until water is fully absorbed and rice is tender. Shell eggs and slice. To serve, spoon rice onto serving platter. Place cooked ham in center of rice. Arrange sliced eggs all around. Sprinkle green onions over all and drizzle with sweet and sour sauce. A final sprinkle with green onions and dish is ready to serve.
Notes: Hard cooked eggs can be cooked ahead, or use your "decorated Easter Eggs."
