The fresh flavor of spring peas is a lovely addition to your Easter meal and the lemon and mint add a zesty touch.
Heat olive oil on medium high heat in large frying pan. When oil is quite hot, add fresh snap peas and stir fry quickly for approximately 3-4 minutes, leaving the peas quite firm. Add the juice of two fresh lemons to the pan while still on medium high heat. Cook until most of the juice has evaporated. Remove from heat and add butter, mint, salt and pepper to taste. Toss together quickly and move to serving dish of your choice.
