Hamble Scramble

Cubes of browned potatoes with ham, onion, green pepper and mushrooms are cooked with beaten egg to make this omelet-like scramble, that's sprinkled with shredded cheese just before serving.
Ingredients
- 2 tbsb. cooking oil or bacon drippings
- 1 cup diced ham
- 1 potato, diced
- 1/2 cup EACH diced onion and green pepper
- 1 small can mushrooms or 1 cup fresh mushrooms
- 6 eggs, beaten
- 1/2 cup shredded cheese, your preference

Method
In a medium skillet brown diced potatoes in oil until browned and crispy. Add more oil if necessary. Add ham, onions, peppers and mushrooms and stir until cooked through. When vegetables are cooked to your satisfaction, spread them out and pour over top the six beaten eggs. Lift sides frequently so that uncooked egg runs to the bottom. Lower heat and cover pan about 2 to 3 minutes until eggs are set. Top with cheese. Serve immediately
Notes: You may substitute ham with Spam, chicken, Polish sausage or crumbled breakfast sausage. Use any cheese, cheddar, American, jack or pepper jack. Salsa and green onions are a good topping over cheese.
