Ham & Eggs Breakfast Squares

Frozen hash browns are seasoned with onion powder and topped with scrambled eggs. The mixture is sprinkled with cubes of ham and shredded cheddar cheese.
 

Ingredients

  • 2 tbsp. cooking oil
  • 8 eggs, divided
  • 1/2 cup milk
  • 1 24 oz. package frozen hash brown potatoes, thawed
  • 1 tsp. onion powder
  • 1 tsp. salt, divided
  • 1/2 tsp ground black pepper, divided
  • 2 cups shredded cheddar cheese
  • 2 cups cubed, cooked ham

Method

Heat oven to 400*. Heat 2 TBS of oil in skillet. Add hash browns and cook for 15 minutes, or until lightly browned. Transfer potatoes to a bowl and mix with 1 egg. Add 1/2 tsp. salt, 1/2 tsp. pepper, and the onion powder. Mix well. Place potato mixture on well-greased 11x17x1" cookie sheet with sides. Whisk the 7 remaining eggs and milk in a microwave-safe bowl. Add remaining salt and pepper. Microwave eggs on high 2-3 minutes; stir; microwave another 2-3 minutes or until eggs are done. Place eggs on top of potato mixture. Sprinkle with cubed ham and cheddar cheese. Bake about 10 minutes, until cheese is melted. Cut into squares and serve.
