Glazed Ham

A homemade glaze prepared with apricot jam, maple syrup, whole grain mustard, sherry and lime juice is the key to this tasty ham's juiciness.Ingredients
- 3/4 cup apricot jam
- 1/4 cup maple syrup
- 1/4 cup whole grain mustard
- 1/4 cup sherry
- 2 tbsp lime juice
- Freshly ground salt and pepper
- 8 1/2 lb smoked leg ham, trimmed of skin and excess fat

In a bowl, mix the apricot jam, maple syrup, mustard, sherry and lime juice. Season to taste with salt and pepper. Heat the oven to 320 degrees F. Score the ham and brush all over with 1/2 cup of the glaze and wrap loosely with foil. Place into the lower part of the oven and bake until the internal temperature of the ham reaches 130 degrees F. This should take approximately 2 hours. Remove the ham from the oven and raise the temperature to 150 degrees F. Peel back the foil from the top and sides of the ham and brush with 6 tablespoons of the glaze and return to the oven. Continue to bake and brush the ham at 5-10 minute intervals, using 6 tablespoons more glaze each time, until the glaze is shiny and golden, about 20 minutes total - being careful to make sure the glaze doesn't burn. Remove the ham from the oven and loosen the foil. Let the ham rest for at least 20 minutes and up to 2 hours before slicing.
