Fresh Pear Cake
Baked in a tube pan, this cake recipe combines finely chopped peeled pears with the flavors of cinnamon and vanilla. A powdered sugar glaze is provided and is to drizzled over the pear cake while it is still warm.
Ingredients
- 3 large eggs
- 2 cups granulated sugar
- 1-1/2 c. vegetable oil
- 3 c. all-purpose flour
- 2 tsp. ground cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- 1-1/2 c. finely chopped peeled pears (about 2 medium)
- 1 tsp. vanilla extract

Method
In large mixer bowl, beat eggs on medium speed with electric mixer. Gradually add sugar and oil; beat throughly. In a bowl, combine flour, cinnamon, salt and baking soda; add to egg mixture and mix well. Stir in pears and vanilla extract. Cake batter will be stiff. Spread evenly in a greased and floured 10-inch tube pan. Bake in a preheated 350-degree oven for 60 to 65 minutes or until cake tests done. Cool in pan for 10 minutes; invert cake on a serving platter. Glaze the cake while it is still warm. *Glaze: In a small bowl, beat until smooth 1-1/4 cups powdered sugar and 2-tablespoons of milk. Drizzle over warm cake.
