Danine's Quick Quiche

A nice quiche that is easy to make and filled with goodies such as bacon, swiss cheese, and onion.
 

Ingredients

  • For each quiche:
  • 1 9" pie shell (deep dish purchased frozen is fine)
  • 8 slices bacon, cooked crisp and crumbled
  • 1 cup shredded Swiss cheese
  • 1/3 cup minced onion, slightly sauted (green or white onion)
  • 1 cup cottage cheese
  • 4 eggs
  • 1 cup half & half
  • 1 tablespoon flour
  • 3/4 tsp salt
  • 1/8 teaspoon pepper

Method

Remove pie shells from the freezer and allow to soften while you mix the filling. Mix remaining ingredients. Crimp the pie shell with your own fingerprints to give a home-created appearance. Pour the filling into each crust and cover the edges of the crust with foil. Bake at 425 degrees for 35 minutes or until knife comes out clean. Remove foil for the last 15 minutes.

 

Notes: An easy way to cover the crust: Start with a square piece of foil. Fold in quarters, cut an 1/4 circle from the foil. Unfold, and place the foil over the crust. Try serving this with fruit, green salad, tiny rolls, and cream puffs for dessert.
