Curry and Herb Crusted Rack of Lamb

Curry, garlic, Italian seasoning, cinnamon, and allspice are among the spices that flavor this lamb.
 

Ingredients

  • Spice Rub:
  • 2 Tbsp olive oil
  • 1 Tbsp Italian Seasoning
  • 1 1/2 tsp ground ginger
  • 1/2 tsp each - salt, black pepper, ground allspice, ground cinnamon, paprika, coriander, cayenne red pepper
  • 1 Tbsp minced garlic
  • 1 Tbsp curry powder
  • 1 Rack of lamb - 2 lbs

Method

1. Combine all ingredients for the spice rub to make a paste. 2. Rub spice paste all over lamb and marinate for 2 hours. 3. Preheat oven to 425 degrees. 4. Roast, uncovered, 25 minutes or until medium-rare.
