Coconut Lime Lady Cake

A creamy dessert cake topped with whipped topping, coconut and lime flavored jelly beans.
 

Ingredients

  • 2 3 oz pkg lady fingers, separated
  • 2 tbsp frozen limeade, thawed and divided
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 2/3 cup lime flavored yogurt
  • 2 eggs
  • 1/2 tsp coconut extract
  • 1/2 cup golden raisins
  • 1/2 cup white chocolate chips
  • 1/2 cup flaked coconut
  • 2 cups frozen whipped topping, thawed
  • Garnish, lime flavored jelly beans

Method

Spray a 9 1/2 inch springform pan with vegetable spray. Line bottom of pan with 1 package of lady fingers, cut side up. Brush with 1 tbsp limeade. Beat cream cheese, sugar, yogurt, eggs and extract in a medium bowl until smooth. Pour over lady fingers. Sprinkle on raisins and chocolate chips. Arrange remaining lady fingers on top of filling, cut side down. Bake at 350 degrees 45 minutes or until set. Remove from oven and while still warm brush on remaining limeade. Sprinkle on coconut. Remove pan rim and cool, then spread sides of cake with whipped cream. Decorate with jelly beans.
