A great brunch dish made with ham and green chilies in a light and airy egg casserole.
 

Ingredients

  • 10 eggs
  • 1/2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 lb. shredded cheddar cheese
  • 1/2 c. butter, melted
  • 1 small tin chopped green chilies
  • 1/2 lb. ham, diced
  • 1 pt. creamed small curd cottage cheese

Method

Butter well a 9x13 in. baking dish and heat oven to 350 deg. With electric mixer beat eggs until light and lemon colored. Add flour, baking powder, salt, cottage cheese, shredded cheese, and melted butter beating until well blended. Stir in diced ham and green chilies. Bake for 50 min. or until top is golden and center is set. Can make ahead and bake later or baked and reheated.
