Carrot Souffle

Dress up your meal with this souffle made with carrots spiced with cinnamon.
 

Ingredients

  • 1 1/2 lbs. carrots, sliced
  • 1/2 cup butter or marg
  • 3 eggs
  • 1/4 cup all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 1/2 cups sugar
  • 1/4 tsp ground cinnamon

Method

Cook carrots in boiling water and cover 20 to 25 min or until tender; drain. Proess carrots and remaining ingredients in a food processer until smooth, stopping to scrape down sides. Spoon into a lightly greased 1 1/2 quart souffle dish. Bake at 350 degrees for 1 hour and 10 min or until souffle is set.
