Broccoli & Stuffing Casserole

A flavorful casserole with broccoli and stuffing to use as a wonderful side dish with roasts.
 

Ingredients

  • 2 lbs. fresh broccoli florets
  • 2 eggs beaten
  • 1 onion, chopped
  • 1 can condensed cr. of mushroom soup
  • 1/2 cup mayonnaise
  • 10 oz. dry stuffing mix
  • 1/2 cup butter, melted
  • 1 cup shredded cheddar cheese

Method

Preheat oven to 350. Greatse 9x13 baking dish. Cook broccoli in boiling water until slightly tender. Combine eggs, onion, mushroom soup and mayo. Place a layer of broccoli in the prepared baking dish. Pour mayonnaise sauce over broccoli. Spread stuffing mix over sauce. Drizle butter over stuffing; top with cheese. Bake 30 minutes.
