Breakfast Asparagus and Ham Quiche

This attractive breakfast or brunch casserole is always a favorite.
 

Ingredients

  • 2 tablespoons margarine
  • 1/4 cup finely chopped onion
  • 1/4 lb. cooked ham, finely chopped
  • 5 eggs
  • 1 cup heavy cream
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 2 cups shredded cheddar cheese
  • 1 (9-inch) frozen deep dish pie crust, thawed
  • 1 (15 oz.) can asparagus spears, drained

Method

In small skillet saute onion in hot margarine over low heat for 2 to 3 minutes or until tender. Add ham; cook and stir for 1 minute. In a large mixing bowl beat together eggs, milk, mustard, and salt on low speed until combined. Stir in the ham mixture. Sprinkle cheese in bottom of pie crust. Carefully pour egg mixture over cheese. Arrange asparagus on top like spokes on a wheel; press asparagus lightly under surface. Bake in a 325 degree oven for 35 to 45 minutes or until center is set. Let stand for 10 minutes before serving.

 

Notes: Other meats may be substituted for the ham in this easy to prepare quiche. It makes a perfect breakfast when served with fresh fruit.
